Once the fruit has been harvested, it is then cut and undergoes a process called ‘spray-drying’. This method produces a completely dry powder from the raw material by rapidly blasting it with a hot gas. This gas is still relatively low temperature however (less than 45°C) to retain maximum nutrition. This produces a coarse powder, which is then refined, or ‘Milled’ into a much finer powder.
