In the processing of the coconut sugar, the coconut nectar undergoes a heat treatment to crystallise the nectar to produce sugar. Coconut sap needs to be heated to concentrate sugars and during this process some of the sugar crystals toast at different rate than others, which results in the dark specks specks that you might find floating in your drink. We do sieve our sugar through a fine mesh, however small pieces of crystallised sugar can occasionally slip through and this is what you are seeing.
